Portugal's sparkling wines are almost entirely consumed by the domestic market, or in the traditional export markets of Brazil, Angola and Macau. Which is a shame, because the best ones are utterly delicious.

Without doubt, the cradle of the Portuguese Espumante production is the region of Bairrada, not least because the experimentation for traditional method wines was the first big job given to Portugal's first wine university, based in ... Bairrada.
