The southern-most community of Andalucia is home to many great wine regions. The most famous is pehaps Jerez and it's fortified wines. However, within the same geographic area and defined under the Cadiz PGI, a revival of non-fortified table wines is happening.
Often termed Vinos de Pastos, this new wave of old-style, dry wines are made from indigenous varieties such as Palomino or Perruno. They offer vibrancy, texture, complexity, interest, and drinkability.
