Grape Varieties Bical
Vinha Formal is Luis' top white wine from the Formal Vineyard, on chalky clay soils in Ois do Bairro, historic home of some of Bairrada's most famous terroir. Laterly, Formal Branco is made wholly from Bical grapes, with an occasional small contribution from it's traditional blending partner, Cerceal, depending on what each vintage provides/requires.
The ageing of this wine in the cellar has varied over the years too, with the really old cuvees being aged for up to a year in chestnut, before a move to french, Allier oak, but for a shorter time, and more recently back to chesnut and also concrete eggs, for around 6 months.
A true Bairrada classic. Well structured, its intensity means it's great now, or will cellar for 20 years or more, and is great for a variety of food pairings.
