Grape Varieties Albillo Real
The 'regal little white one' is a variety not often found outside this area of Spain. It's a naturally low-yielding and aromatic variety that suits the poor, sandy, granit-based soils of the Gredos.
Daniel makes this wine in a very traditional manner, with hand harvesting from 90 year old vines, a 3 day maceration, and then natural fermentation in french oak barrels. Post fermentation, it is then left in barrel to mature for a further 16 months, before bottling unfiltered.
A pithy, flavourful wine, with bags of character and charm. It has complexity and perfect acidity for drinking on it's own, but enough richness and freshness to also pair with food.
