Grape Varieties: Rufete

The Santon is a single, old vineyard selection of 100% Rufete . It comes from quite sandy soils, high up in the Sierra de Salamanca. Although not Daniel's usual Garnacha from Gredos, you can smell, taste, and feel his influence in this Cuvee. It's light and aromatic, delicate yet structured, and has wonderful natural acidity and therefore balance.

It's a wild fermention, with very light extracction, followed by ageing in concrete and oak, with no fining or filtration. It's silky and enjoyable now, but will develop plenty of complexity with age.
