Quinta do Piloto have a (not so) secret ingredient that makes their 10 and 20 year old Moscatel de Setubal wines not only incredibly complex and delicious, but also literally unique!
The family have a tiny cellar area tucked-away in a corner of the winery. It contains about 20, 100 Litre, chestnut barrels, in which they age these special wines. The barrels are very old, and offer almost no wood influence to the wines, but they contain what is called 'mother' liquor. This is a tiny proportion of wine and lees, which, similar to a Jerez solera system, is never removed and contributes to every wine that is aged in the barrels. It adds concentration and complexity to what are already, incredibly high-quality Moscatel wines.
