Grape Varieties: Hondarribi Zuri
The Kaiaren has beeen born through the winery's experimentation and learning. K5 have several plots of vines at the estate, each with different aspects and ages of vines. Over the years they have learnt which are best for the flagship K5 wine, to produce the best quality and authentic Hondarribi Zuri.
One year, a single tank from a single parcel seemed to have a significantly different character to the others, mainly with more intensity and more structure. The team decided to leave it, on lees, and age it further, to see how it developed... Each year they came to try it, and it simply got better, and better, and better!
The result is the Kaiaren!
...Which the winery also said they could have left even longer, but didn't want to 'push their luck'! After 4 years on lees, and a furhter 2 years in bottle before release, the wine is incredibly intensely flavoured, with remarkable structure and texture through the palate. It has complexity already but will continue to improve and develope for many more years.
A ground-breaking wine! One that has to be tasted to appreciate fully.
